Aug. 3 - Wild Ale Dinner

Yo! It's almost that time again (already?!) for the next installment of our monthly Brewmaster's Dinners. Tuesday, August 3rd we'll be tasting some funked-up beers with chef-inspired small plates. Tickets are on sale now and are only $35 including tax & gratuity. Here's what's on the menu:

- Chilled sorrel, pea vichyssoise with Jolly Pumpkin Bam Biere (named in Men's Journal's Best 25 Beers in America)

- Grilled radicchio salad, maytag blue cheese, walnuts & maple balsamic dressing with New Belgium's Fall Wild ale (dubbel spiced with Schisandra berries, then fermented with Trappist yeast & brettanomyces)

- Roulade of sole, crab & spinach, cucumber-tomato ver blanc with Mikkeller's It's Alive wild ale (dosed with brettanomyces / a tribute to Orval)

- Goat cheese/sour cherry ice cream with Panil Barriquee Flanders Red ale (triple fermented: steel tank, cognac barrel & bottle)

Now on Tap - Belgian Witbier

Introducing our first ever Witbier. A Belgian style that's very pale & cloudy due to it being unfiltered and the high level of wheat that's used in the mash. Always spiced, generally with coriander & orange peel (we used Grains of Paradise as well), ours is crisp with a slight twang from the wheat and the unique Belgian ale yeast used for fermentation. This is refreshing and thirst-quenching with tons of juicy flavor with a hint of spice. It's delicious!

Brewer's specs:

Malt: Pale 2-row, biscuit, malted white wheat & unmalted wheat

Hops: German Hallertauer & Czech Saaz

Spices: Coriander, orange peel, Grains of Paradise

OG 10.8 Plato
4.7% ABV

Now on Tap - St. Elizabeth Belgian DIPA

Introducing our first ever Belgian double IPA. We took our hefty double IPA and dosed it with Belgian yeast for an incredible balancing act of bitter, sweet, fruity & earthy. Clocking in at 10% ABV, this beer is hoppy as hell without being overpowering thanks to the hefty malt backbone and addition of honey to the boil. This beer is exactly what it sounds like - if you're a fan of hoppy Belgians like Houblon Chouffe or Tank 7 you're really going to enjoy this!

Brewer's specs:

Malt: pale 2-row, Vienna, malted white wheat

Hops: Colombus (added at 10 different times from start to finish)

50 pounds of local honey added to boil

Fermented with 2 different Belgian ale yeasts

SG 23 Plato
10% ABV

Wittekerke Framboise - a blend of Wittekerke's regular wheat beer, Petrus oak-aged pale ale & pure raspberries

Brouwerij Van Honsebruck's St. Louis Peche lambic

Prosciutto-wrapped pork tenderloin with apricot glaze

Puff pastry with dark chocolate mousse, chocolate-covered cherry with Kasteel Rouge (oud bruin aged with sour cherries)
